Title: Spam Ole

2cChicken stock
1/4cBlanched almonds
2tbSesame seeds
2 Flour tortillas
8 Cloves garlic, minced
3smOnions, chopped
5lgTomatoes, chopped
1/4cOlive oil
4 Jalopena peppers, chopped
2tsCinnamon
1tsGround cloves
1tsGround fennel
1/2tsGround coriander
2ozUnsweetened chocolate,
  Grated
3tbHoney
  Juice of 1 lime
  Salt to taste
  Torte:
12 Flour tortillas
4 (12 ounce) cans Spam Lite
2cCooked rice
1/2lbJack cheese, grated
  Garnish:
  Lettuce
  Avocado, sliced
  Lemon juice
  Assorted hot peppers

Directions: For the mole sauce: Toast the almonds, sesame seeds, and 2 tortillas under a broiler 5 minutes. Grind in food processor and set aside. Saute: garlic, onions, and tomatoes in oil and add peppers and spices. Stir in ground mixture. Place the stock in stock pot and add the mixture. Simmer uncovered for 2 hours. Cover and refrigerate 2 days to age. Heat sauce and add grated chocolate, honey, and lime juice. Adjust salt. For filling: Grate Spam Lite into a hot skillet. Stir-fry until lightly brown. Do in several batches if skillet isn't large enough. Drain on paper towel and set aside. To assemble: Preheat oven to 325 degrees. On an oiled pan, place 1 tortilla. Layer some Spam, rice, cheese, and mole sauce over it. Repeat until the tortillas are all used, ending with a tortilla on top. Bake torte until heated, about 25-30 minutes. Smother with sauce, serve remainder of sauce on side. Garnish and serve. Makes 6 to 8 servings.
